I made this recipe out of a couple different recipes. Kevin wouldn’t eat it if it didn’t have meat so it ended up with meat you can totally make it without though. 😊 Enjoy!

• 1 medium head cauliflower chopped florets

• 1 medium carrot, chopped

• 3 stalks celery, chopped

• 2-1/2 cups chicken or vegetable broth

• 3 tablespoons butter

• 2 tablespoons corn startch

• 3/4 teaspoon salt

• 1/8 teaspoon pepper

• 2 cups milk (I use almond milk)

• 1 cup shredded cheddar cheese

• Optional* 1 pound ground beef

Brown ground beef and drain. Set aside.

Chop veggies. Thrown in a large stock pot with butter and sauté till celery is translucent.

Add broth, salt and pepper and bring to a boil

Whisk cornstarch into milk and add to pot (this will help thicken- make sure to add to boiling liquid)

Let boil for 2 mins or till thickened slightly then remove a few cups and put into blender (I do this so it’s creamier and not super lumpy. take out as much as you want) blend it up till smooth then put it back into the pot. (For reference I blend about 2 cups)

Add the beef and cheese. Simmer for a bit and serve with avocado on top and a bit more cheese. (Cause we need more cheese)
